Ingredients

Onions (Raw)
1 large / 150 grams
Sweet potato (Cooked, baked in skin, without salt)
1 large / 180 grams
Pasta (Corn, dry)
8 oz / 227 grams
Salt (Table)
1 dash / 0.40 grams
Pepper (Spices, black)
1 dash / 0.10 grams
Olive oil (Salad or cooking)
1 tbsp / 13.5 grams
Almond milk (Plain)
1 cup / 240 grams

Instructions

Step 1
Preheat oven to 400 degrees F.
Step 2
Chop onion and sweet potato. Place sweet potato on a sheet pan and bake for 30-45 minutes or until fork tender. Set aside.
Step 3
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Step 4
In a skillet over medium heat, sauté onion in olive oil until tender. Toss pasta with a bit of oil and season with salt and pepper; serve.
Step 5
Add sweet potato to the onion and add almond milk. Season with salt and pepper, to taste. Blend all together. Pour over the pasta and mix to combine.
