Ingredients

Olive oil (Salad or cooking)
1/4 cup / 54 grams
Salt (Table)

Mustard greens (Raw)

Garlic (Raw)
3 cloves, minced / 9 grams

Instructions

Step 1
Mash garlic and teaspoon of salt to a paste. Heat oil in a 5-quart pot over moderately high heat until hot and saut garlic paste until fragrant.
Step 2
Add half of the mustard greens to the pot and toss with tongs to coat with oil, adding remaining half as greens wilt. Add water and cook, covered, stirring occasionally, 5 minutes.
Step 3
Continue to cook, uncovered, until greens are just tender and most of liquid is evaporated. Season with additional salt as needed.
