Ingredients

Puff pastry (Frozen, ready-to-bake)
3 1/2 oz / 99.2 grams
Garlic (Raw)
3 clove / 9 grams
Vegetable oil (Natreon canola, high stability, non trans, high oleic (70%))
2 tbsp / 28 grams
Spinach (Frozen, chopped or leaf, unprepared)
1 1/2 cup / 234 grams
Sour cream (Cultured)
1 tbsp / 12 grams
Cream cheese (Low fat)
3 tbsp / 45 grams
Mozzarella cheese (Low sodium)
1 cup, shredded / 113 grams
Salt (Table)

Instructions

Step 1
Preheat oven to 400 degrees F.
Step 2
Chop the garlic. Heat a non-stick skillet to medium low heat, sprinkle with some cooking oil. Add garlic and cook for few seconds, then add spinach and cook until all water has evaporated. Set cooked spinach on the side to cool down.
Step 3
Combine cooled spinach with sour cream, cream cheese, and grated mozzarella cheese, add salt and black pepper to taste.
Step 4
Divide puff pastry into 8 pieces.
Step 5
Press each of the dough pieces into a muffin tin well.
Step 6
Using a spoon, fill each cup with the spinach mixture.
Step 7
Bake the cups for about 20 minutes, until golden brown.
