Ingredients

Turkey sausage (Breakfast links, mild)

Sweet potato (Raw, unprepared)
2 sweetpotato, 5″ long / 260 grams
Red bell pepper (Sweet, raw)
2/3 cup, chopped / 100 grams
Yellow peppers (Sweet, raw)
1/2 pepper, large (3-3/4″ long, 3″ dia) / 93 grams
Onions (Raw)
1 medium (2-1/2″ dia) / 110 grams
Spinach (Raw)
1 package (10 oz) / 284 grams
Mushrooms (White, raw)

Olive oil (Salad or cooking)

Instructions

Step 1
Dice kielbasa, potatoes, peppers, onions, and mushrooms. Rough chop spinach.
Step 2
Heat olive oil in a skillet over medium.
Step 3
Sauté onions, spinach, and mushrooms until tender, about 5-7 minutes. Add bell peppers and sauté 5 minutes.
Step 4
Sauté turkey keibasa (or sausage) until evenly browned.
Step 5
Sauté sweet potato until soft and fork tender.
Step 6
Toss together in a bowl and serve.
